If being Jewish is not a ethnicity, then why do so many Jews have the "Jewish nose"?

This is a serious question. I have met so many Jews in my travels & most of them have the "Jewish nose", it's kind of a "hook" nose similar to the "Roman nose" but more rounded then simply crooked. You only ever see this characteristic in Jews. It's extremely unique in shape.
