best chicken bites seasoning mix?

so,next week i'm making chicken bites with the following recipe: half a chicken breast,2 slices off fresh bread,1 egg and 70g of flour and i need a seasoning. I was wondering what would be the best seasoning/mix,here's a list of loads of ideas: pinch of chili,salt,pepper,coriander,tarragon,basil,lemon thyme,orange/lemon/lime zest,oregano,fajitas spice mix.
