How Las Vegas 2013 is different from 2000?

I mean I was there around 2000 stayed for a week at the Bally's, saw as many casinos as there were at the time, visited Grand Canyon Should I go there again? people say it changed a lot, is it? Beside gambling are those eat all buffets still there?
