What would happen if airport security found an illegal substance?

It terms of liquor. For example liquor higher than 70% ABV (by law this isnt allowed in checked luggage) or more than 5 Litres of liquor (also not allowed by canadian government) Would they simply confiscate it or would someone be looking at worst trouble (i.e kicked off flight, fine?) what are generally the chances of my bag even being searched that being said does security even care about your belongings when they search through your bag?
