If I buy the unlocked version of the galaxy note II, can I use any prepaid card for service on it?

I want to buy the unlocked version of the galaxy note II for about $700. Will I be able to use T-mobile or AT&T's monthly prepaid plans for service on it? Is there any way I can insure my phone even if I don't sign a two year contract with either company?
