How to apply a sack finish to a brick patio?

I just installed a brick patio for a customer. I was planning on piping the mortar into the joints, then striking them down. Now the customer wants a sack finish. What approach should I use for a light to medium finish. Now I plan on mixing my mortar and just trowling it in. How do I get the sack finish?
